Mushroom and Meat Kabobs

500 g ( 1lb) mushroom caps
500 g (1 lb.) meat (pork, veal, chicken or pork liver)
2 onions, quartered

2 peppers
200 g (half a pound) bacon
salt and black pepper to taste
2 garlic cloves
very finely chopped
one cup of oil
wooden skewers

Mix garlic, salt and pepper with oil and let the mixture rest for and hour.
Use only clear oil for basting.
If the mushrooms caps are very  large cut them in about one inch and a half (3cm) cubes.
Slice meat  into appropriate cubes, about the size of mushroom caps.
Halve, seed and cut peppers into pieces the size of the mushroom caps.
Alternatively thread meat cubes and vegetables so that the series goes:
mushroom-onion-meat-pepper-meat-mushroom-bacon-meat-onion-mushroom.
Sprinkle kebabs with the spicy oil and grill  until the meat is done (about 10 minutes).
Serve with baked or fried potatoes and a big salad. And a glass of red wine.


Romanian Mitch Sausages

1 Kg (2 lbs.) ground meat (pork, beef, mutton). Best results with a mixture of pork and beef.
1/4 tsp. baking soda
a couple of tablespoons of meat broth
salt and black pepper to taste
2-3 garlic cloves
very finely chopped
100g (1/4 lbs.) water

Grind the meat. Add salt,  pepper, garlic, meat broth and baking soda and mix everything for 5 minutes, adding two tablespoons of water a little at a time. Keep the bowl with this mixture in the fridge  for a couple of  hours. Just before grilling, take tablespoons of the mixture and with wet hands, shape small sausages about 5-7 cm (2-3 inches)  long and 2.5 cm (1 inch) thick.
Grill  until the meat is done (about 10 minutes).
Tastes perfect  with very cool white wine or beer and pickled cucumbers.


Antique Roman  Burger

500g ( 1lb) minced pork and beef meat
1 French roll, soaked in white wine
1/2 tsp. ground pepper
1/2 tsp. salt

Mix minced meat with the soaked French roll. Mix pepper  into
the meat. Form small burgers and grill them. A glass of white wine, some fried or smashed   potatoes and a tomato salad and you a have a nice meal.

 

Hot Fish Grill

1Kg ( 2 lbs.) fish fillets. Any fish will do but best results are with carp or salmon.
1/2 tsp.  ground pepper
1/2 tsp. salt

1/2 tsp. hot paprika powder or hot chili
2-3 garlic cloves very finely chopped
a cup of hot water
chopped parsley

Sprinkle the fish with some salt, paprika or chili and some pepper and grill until very well done.
Mix in a bowl water, salt, pepper, parsley and garlic. Put the grilled fish in this sauce, let it rest well covered for 5 minutes  and serve. Very good with Italian polenta or any other corn meal.
Take care to have some cool beer or white wine around.

 

Barbecued Chicken with Garlic Sauce

1 barbecue chicken cut to pieces.
2-3 garlic cloves very very finely chopped
1-2 tbs. olive oil
1/4 tsp. ground pepper
1/4 tsp. salt
a cup of boiling water
very finely chopped parsley

Mix in a bowl very well salt, garlic and oil, add slowly boiling water. Add parsley. Grill the chicken until very, very well done. Put the chicken in the bowl and let it rest for a couple of minutes. Serve with smashed or fired potatoes or Italian polenta. And a beer.

 

Grilled Mushrooms with Cheese

500 g ( 1lb) mushroom caps
200 g cheese grated. Any cheese will do.

Fill caps with cheese and put them on the grill (with the cheese above).
Grill them until cheese melts. Have a small glass of votca or other strong drink.
Ok, a beer will do if you don't like strong drinks.
