500 g ( 1lb) mushroom caps
500 g (1 lb.) meat (pork, veal, chicken or pork liver)
2 onions, quartered
2 peppers
200 g (half a pound) bacon
salt and black pepper to taste
2 garlic cloves very finely chopped
one cup of oil

Use only clear oil for basting.
If the mushrooms caps are very large cut them in about one inch and a half

Slice meat into appropriate cubes, about the size of mushroom caps.
Halve, seed and cut peppers into pieces the size of the mushroom caps.

Sprinkle kebabs with the spicy oil and grill until the meat is done (about 10
minutes).
Serve with baked or fried potatoes and a big salad. And a glass of red wine.
1 Kg (2 lbs.) ground meat (pork, beef, mutton).
Best results with a mixture of pork and beef.
1/4 tsp. baking soda
a couple of tablespoons of meat broth
salt and black pepper to taste
2-3 garlic cloves very finely chopped
100g (1/4 lbs.) water
Grind the meat. Add salt, pepper, garlic,
meat broth and baking soda and mix everything for 5 minutes, adding two tablespoons of
water a little at a time. Keep the bowl with this mixture in the fridge for a couple
of hours. Just before grilling, take tablespoons of the mixture and with wet hands,
shape small sausages about 5-7 cm (2-3 inches) long and 2.5 cm (1 inch) thick.
Grill until the meat is done (about 10 minutes).
